混搭的食物容易混淆視聽,讓人不知不覺吃下太多澱粉與脂肪,以及混在裡面的調味料。有一次我參加一個野外活動,主辦單位叫了外燴辦伙食,其中有一道咖哩雞,我只挑了雞肉,刻意避開馬鈴薯,當時我正好身上配置一台連續血糖機在測試,結果那咖哩雞讓我的血糖衝到快200,連續震盪了四、五個鐘頭才逐漸降低。血糖高升,胰島素必然跟著震盪,而胰島素就是製造脂肪的荷爾蒙!所以,對於這種混合烹調食物,解決之道就在於知道自己究竟吃了哪幾種食物,每種食物的比例和份量如何?不用算熱量,用眼睛判斷份量即可,同時「覺察」自己吃完食物後的反應,是飽足、舒適,還是腦霧、飢餓?現在台灣進口了一款價格非常親民的連續血糖機,用手機就可以讀取血糖值,不妨買一片來讓自己開開眼界。古話說:不見黃河心不死,看見自己的血糖在狂飆,有些食物你大概再也「不要不要」了。還有些人堅持,一定要吃「主食」才「正常」,他們辯稱:古人都吃很多主食也不會胖呀。但我們知道,「古人」──尤其農業社會的人,的確吃很多主食,但是他們雖然不上健身房,卻整天都在「活動」,到任何地方都以走路為主,做任何事情幾乎都親力親為,而且古人也沒有一直吃個不停。然而我們現代人除了一直(想)吃以外,最大的問題卻是「不活動」──能坐絕不站,能搭車絕不走路,連上下二樓都要搭電梯。肥胖醫學研究發現,運動未必能減重,但現代人的久坐不動,卻是「新菸害」,是全球性肥胖的主因之一。另一關鍵差異在於,由美國在1980
